Asiste al Chef Ejecutivo en la contratacin, capacitacin, programacin, evaluacin, asesoramiento, disciplina, motivacin y adiestramiento de empleados.
Responsable de todos los aspectos de la gestin del equipo culinario, asegurando la preparacin de calidad de todos los elementos del men y el manejo/almacenamiento adecuado de todos los artculos alimentarios de acuerdo con los estndares de la empresa.
Coordina la compra de todos los artculos alimentarios y desarrolla mens mientras mantiene los costos de alimentos y mano de obra aprobados.
Demuestra un enfoque prctico en todos los productos producidos en el departamento, asegurando que la calidad, presentacin y consistencia cumplan con los estndares de la empresa.
Asiste en el desarrollo de recetas estandarizadas para todos los elementos del men.
Asegura que las recetas sean precisas y se actualicen segn sea necesario.
Asegura que la cantidad adecuada de productos de panadera y pastelera se prepare de acuerdo con la demanda pronosticada y se entregue puntualmente al punto de venta designado para el disfrute de los huspedes.
Responsable de la completa preparacin, limpieza y organizacin de las reas del departamento/cocina dentro del restaurante.
Se mantiene informado sobre las tendencias de la industria culinaria.
Crea tarjetas de recetas para todos los elementos del men y capacita al personal para usarlas.
Prepara las estaciones adecuadamente y a tiempo para cada perodo de servicio.
Asegura la frescura de los alimentos y los ingredientes al verificar su calidad, seguir el inventario de artculos antiguos y nuevos, y rotar el stock.
Estima el consumo de alimentos, realiza pedidos o requisiciones de suministros y recupera alimentos del almacenamiento segn sea necesario.
Mantiene registros y cuentas.
Comprende el impacto de las operaciones de la cocina en los objetivos financieros generales de la propiedad.
Sigue todas las polticas y procedimientos de seguridad y proteccin de la empresa; informa sobre accidentes, lesiones y condiciones de trabajo inseguras al supervisor.
Completa la capacitacin y certificaciones de seguridad.
Desarrolla y mantiene relaciones laborales positivas con los dems, apoya al equipo para alcanzar metas comunes y escucha y responde adecuadamente a las preocupaciones de otros empleados.
Asegura que el uniforme y la apariencia personal sean limpios y profesionales, y mantiene la confidencialidad de la informacin propietaria.
Realiza otras tareas razonables segn lo solicite el Chef Ejecutivo.
Orientado hacia la hospitalidad
Mnimo 6 aos de experiencia como Sous Chef en un hotel de alto volumen, restaurante con cocina de produccin de pastelera centralizada o en un entorno de Fine Dining.
Experiencia en gestin.
Conocimientos financieros.
Capaz de manejar situaciones difciles de manera efectiva.
Capaz de trabajar rpida y eficientemente, especialmente bajo presin.
Debe ser capaz de inclinarse, agacharse, estirarse, estar de pie durante 2-3 horas seguidas y levantar objetos de hasta 50 libras.
Flexibilidad para trabajar en turnos diversos, incluidos noches, fines de semana y festivos.
